Pizza... I like Italian food, its simplicity is beautiful especially to my taste buds. I've never been to Italy but when I have pizza, that's the closest I could get with this scrumptious flat bread. Bread making is not as common in Zambia, let alone pizza making. It's usually store bought (which isn't a bad thing if you want to grab a quick bite). But little did you know, it's simple to make. Especially once you get the hang of making it. You can tweak the recipe as you become a pro at it.  Nothing beats the smell of homemade pizza, trust me. And the goodness about making it at home is it doesn't have to be the perfect round shape it usually comes in. It could be anything.  Make this for your breakfast, lunch, dinner, kids lunch for school... This simple recipe should be on your finger tips because it comes in handy, all the time! Red velvet.......When I think red velvet I think fluffy and moist cakes. Not forgetting that eye catching velvet colour.This romantic vibrant cake became popularized in the 1940s. And has been classy and famous even till today! I'd eat a red velvet cake/cupcake anytime! It's a winner. The original recipe calls us to use beet (beetroot) juice to tint the chocolate cake red. CHEESE STRAWS

Cheese straws... These are an absolute fav of mine. They are an easy snack to get by and are super crunchy. What I love about this recipe is that the cheese is not overpowering. You can taste all the other ingredients like the creamy butter and herbs, yum! You can serve this to your guest as a snack while they await a scrumptious dinner or even for kids to carry as a snack(not a meal, please) to school. Look out for my next post soon. Happy baking... Cibwabwa (Pumpkin Leaves in a Peanut Sauce)

Ifisashi.... Pumpkin leaves are very nutritious. They contain iron, vitamin A and C as well as proteins. They are widely eaten here in Zambia. In fact, you can find them growing almost anywhere. If cooked right, it's a delicious creamy dish which mostly goes with our staple food nshima or any starch you fancy.  This tasty and filling dish was cooked on a mbaula (brazier) but can also be cooked on your stove. There are variations on the method of cooking this dish, this is just one of them. And if you have not cooked or even tasted it, please have a go at it. It is yummy! Look out for my next post soon. 15 Minute Breakfast......French Toast Sticks

Mornings can be so busy especially when it comes to making breakfast. If you like french toast you will definitely like these french toast sticks. Which will take you only 15 minutes to prepare. They can be made and stored in an air tight container or zip bag, pop them in the freezer and the next morning just warm them up in your toaster or oven and you're good to go.  But then again if you are too busy to do it, why not hire a chef to do all the work for you..:) Look out for my next post this week   Happy cooking..
