Cibwabwa (Pumpkin Leaves in a Peanut Sauce)

Ifisashi.... Pumpkin leaves are very nutritious. They contain iron, vitamin A and C as well as proteins. They are widely eaten here in Zambia. In fact, you can find them growing almost anywhere. If cooked right, it's a delicious creamy dish which mostly goes with our staple food nshima or any starch you fancy.  This tasty and filling dish was cooked on a mbaula (brazier) but can also be cooked on your stove. There are variations on the method of cooking this dish, this is just one of them. And if you have not cooked or even tasted it, please have a go at it. It is yummy! Look out for my next post soon. 15 Minute Breakfast......French Toast Sticks

Mornings can be so busy especially when it comes to making breakfast. If you like french toast you will definitely like these french toast sticks. Which will take you only 15 minutes to prepare. They can be made and stored in an air tight container or zip bag, pop them in the freezer and the next morning just warm them up in your toaster or oven and you're good to go.  But then again if you are too busy to do it, why not hire a chef to do all the work for you..:) Look out for my next post this week   Happy cooking.. Salads... Couscous is a whole-grain native of North Africa which is a small form of pasta made of semolina. Not only is it quick and tasty, it provides essential nutrients for your overall health. It has dietary fibre, proteins, trace and essential minerals. How's that for a salad! It can be served as a side dish, a main meal  or even with any meats you fancy. For the working class/students this is something quick and healthy you can fix up in 15 minutes in the morning before you dash off. Just pack it in an air tight container and place in the fridge or cool place for your lunch. Introduce this slowly to your kids and siblings too. Don't restrict their taste buds to the usual coleslaw (a.k.a cabbage and mayonnaise) or potato salad.  Help them develop a culture of eating fresh and healthy veggies and herbs.
